Born from a careful selection of Chardonnay, Pinot Noir and Pinot Meunier grapes from the best crus, this champagne represents a refined combination of balance, complexity and freshness. The minimal dosage enhances its authenticity and highlights the quality of the base wines that make up the cuvée.

The production method is the méthode champenoise, or traditional method, which involves a second fermentation directly in the bottle. This process contributes to the formation of fine and persistent bubbles, as well as developing elegant and complex aromas during the long maturation on the lees.

Vintage Details

Each edition of Champagne Extra Brut Réserve - Palmer & Co is born from the blend of different vintages, with a significant presence of reserve wines that guarantee consistency and aromatic depth. The grapes come from harvests characterized by climatic balance, with alternating sunny days and cool nights that favor ideal ripeness and freshness.

Winemaking and aging

Winemaking follows the strict traditional method. After the first fermentation, the wine is bottled for the secondary fermentation – the second fermentation that generates the bubbles. The cuvée matures for at least 6 years on the lees in the house's underground cellars. During this long period, the wine develops finesse, harmony, and aromatic complexity. After dégorgement (the removal of spent yeasts), the wine rests for another year in the bottle, achieving its perfect balance. The final dosage is only 5 g/l, classifying it as Extra Brut, therefore with a very low residual sugar content.
