Produced by the historic maison Roger Pouillon et Fils, located in the heart of the Vallée de la Marne, this Champagne is born from a harmonious blend of Pinot Noir, Chardonnay, and Pinot Meunier, sourced from the villages of Mareuil, Mutigny, Avenay, Épernay, and Festigny. These areas, famous for their particular combination of chalky and clay soils, give rise to grapes with a rich and complex aromatic profile. Fabrice Pouillon's production philosophy, the current interpreter of the maison, is based on absolute respect for the grape. Vinification takes place partly in steel and partly in barriques, without the addition of external sugars: all the necessary sugar is that naturally present in the clusters. After the secondary fermentation, the Champagne rests on its lees for a long time, thus developing aromatic complexity and finesse. The extra brut dosage—therefore with a very low residual sugar—enhances the purity and freshness of the wine, delivering a taut, vertical, and dynamic profile.Tasting notes
