The Champagne Extra Brut 'Grande Vallée' - Roger Pouillon et Fils represents one of the most authentic and clear expressions of the Champenoise tradition. Produced by the historic maison Roger Pouillon et Fils, located in the heart of the Vallée de la Marne, this Champagne is born from a harmonious blend of Pinot Noir, Chardonnay, and Pinot Meunier, sourced from the villages of Mareuil, Mutigny, Avenay, Épernay, and Festigny. These areas, famous for their particular combination of chalky and clay soils, give rise to grapes with a rich and complex aromatic profile. Like all great Champagnes, "Grande Vallée" is also made with the Champenoise method, also known as the traditional method: a second fermentation in the bottle that allows for the natural formation of bubbles and provides the typical refined structure of this extraordinary sparkling wine.

Winemaking and aging

Fabrice Pouillon's production philosophy, the current interpreter of the maison, is based on absolute respect for the grape. Vinification takes place partly in steel and partly in barriques, without the addition of external sugars: all the necessary sugar is that naturally present in the clusters. After the secondary fermentation, the Champagne rests on its lees for a long time, thus developing aromatic complexity and finesse. The extra brut dosage—therefore with a very low residual sugar—enhances the purity and freshness of the wine, delivering a taut, vertical, and dynamic profile.

In the glass, it presents a bright straw yellow with golden reflections. The perlage is fine, continuous, and persistent, a sign of a long and careful maturation on the lees.

Nose

On the nose, it offers aromas of ripe fruit such as apple and pear, nuances of candied citrus, and light notes of almond and bread crust, typical of the traditional method. Delicate mineral sensations then emerge, and a floral hint that enriches its complexity.
