The Champagne Extra Brut Blanc de Noirs “Couarres Château” - Chartogne-Taillet is produced in Merfy, a small village in the Montagne de Reims, in the heart of Champagne. It is an authentic expression of the territory, the result of the artisanal work of the Chartogne-Taillet maison, which for generations has been enhancing individual crus with an approach respectful of nature. Made exclusively from Pinot Noir grapes, this Blanc de Noirs Champagne enhances the power and finesse of the grape variety, while revealing the elegance and purity of the terroir. Refermentation takes place according to the Champenoise method (also known as the "classic method"), i.e., with a second fermentation in the bottle that gives the wine its typical fine and persistent effervescence.

Vintage details

Each edition of “Couarres Château” tells the peculiarities of the vintage: the harvest is done by hand to preserve the integrity of the grapes, in a vintage characterized by a balanced climate, with cool nights and warm days that favored a slow and complete ripening of the Pinot Noir. The result is a Champagne with surprising aromatic complexity, in perfect balance between structure and freshness.

Vinification and aging

After gentle pressing of the grapes, fermentation takes place partly in steel and partly in wood, so as to maintain the purity of the fruit but add a note of depth. Refermentation in the bottle according to the classic method is followed by long aging on the lees, which lasts for over 36 months. The dosage is "Extra Brut", therefore with a minimum quantity of added sugars: this enhances the freshness, mineral tension and sincerity of the initial grapes.
