Vinification and Ageing

The vinification of Champagne Brut Rosé - Billecart-Salmon occurs separately for each grape variety, in small 50-hectoliter wooden barrels, with slow fermentations of about three weeks and double decantation of the must to increase its purity. A portion of the Pinot Noir is vinified as a red wine, contributing to the characteristic pale color and fruity profile of the rosé. After blending, the wine ages on its lees for over 36 months, developing pastry notes and complexity. The Brut dosage, light and balanced, enhances freshness and drinkability.
