Winemaking strictly follows the traditional method: after the first fermentation in stainless steel, which enhances the freshness and primary aromas of the grape variety, the wine undergoes a second fermentation in the bottle. Aging on the lees lasts an average of 24-30 months, a period that imparts complexity, creaminess, and a very fine perlage.
