The grapes are selected from vintages with perfect Chardonnay maturation, featuring sunny summers and cool nights that favor the balance between acidity and aromas. Fermentation takes place in stainless steel tanks to maintain the varietal freshness of the Chardonnay. This is followed by prise de mousse, the secondary fermentation in the bottle typical of the traditional method. The wine then ages on its lees for approximately 36 months, during which time it develops its creamy structure and characteristic pastry notes.
