What kind of wine is Champagne Blanc de Blancs - Palmer & Co

Champagne Blanc de Blancs - Palmer & Co is made exclusively from Chardonnay grapes, an expression of finesse and purity from two excellent terroirs: Villers-Marmery and Trépail, both Premier Crus of the Montagne de Reims. Here, the calcareous and chalky soils allow Chardonnay to develop elegance and freshness, distinctive characteristics of the best Blanc de Blancs. Maison Palmer & Co, a historic winery in Reims founded in 1947, is renowned for its refined and balanced interpretation of the Champenoise style, a traditional production method that involves a second fermentation in the bottle to obtain fine and persistent bubbles.

Vintage details

The vintage of this Champagne Blanc de Blancs - Palmer & Co perfectly reflects the climatic balance of the harvest: a season characterized by sunny days and cool nights, ideal for preserving all the fragrance and freshness of Chardonnay. The harvested grapes showed uniform ripeness and an intense aromatic profile, with excellent levels of natural acidity, essential for giving vitality and longevity to the wine.

Winemaking and aging

Winemaking follows the Champenoise method (or traditional method), the same that distinguishes all great Champagnes. After the first fermentation in steel, the second fermentation takes place in the bottle, followed by a long maturation on the lees for about 5-6 years in the Maison's underground cellars. This slow and constant aging enriches the wine with complexity and a creamy texture. After disgorgement, the bottles rest for an additional 6-8 months before being released, with a final dosage of about 9 g/l, which enhances the balance between freshness and roundness.

Tasting notes

Color

On sight, Champagne Blanc de Blancs - Palmer & Co presents a brilliant straw yellow color with golden reflections. The perlage is very fine and continuous, a sign of long aging and great enological work in the cellar.

Nose

The bouquet is elegant and complex: it opens with floral notes of hawthorn and acacia, followed by hints of ripe citrus and nuances of white-fleshed fruit. With aeration, light hints of hazelnut and toasted bread emerge, due to the long rest on the lees.

Taste

On the palate, it captivates with its vibrant freshness and creamy structure. The bubbles are delicate and perfectly integrated, providing a sensation of harmony and persistence. The finish is long, with a mineral profile, citrus notes, and a pleasant savory quality that invites another sip.

What dishes to pair with Champagne Blanc de Blancs - Palmer & Co

Ideal as a classy aperitif, Champagne Blanc de Blancs - Palmer & Co also excels at the table. Thanks to its freshness and aromatic purity, it elegantly accompanies both delicate and flavorful dishes. Perfect with:

  • raw seafood and oysters
  • tuna tartare or white fish carpaccio
  • seafood or vegetable risottos
  • fresh and goat cheeses
  • white meats or poultry in a light sauce

Its versatility also makes it a refined choice for vegetarian dishes or for informal tasting moments.

Storage and aging: how to store Champagne Blanc de Blancs - Palmer & Co

To maintain the characteristics of this Champagne, it is important to store it carefully. The ideal conditions are:

  • Temperature: constant between 10 and 12°C
  • Light: away from direct light sources, especially sunlight
  • Position: bottle laid on its side, to maintain contact between the wine and the cork and ensure sealing
  • Environment: with moderate humidity and no vibrations

If well stored, Champagne Blanc de Blancs - Palmer & Co can evolve in the bottle for several years, enriching itself with more complex and enveloping notes, without losing its innate freshness.
