What wine is Barolo Cannubi DOCG 2019 - Carlo Viglione

The Barolo Cannubi DOCG 2019 - Carlo Viglione originates from one of the most famous crus in the Langhe, Cannubi, recognized as one of the best exposures for cultivating Nebbiolo. This wine is the result of meticulous and traditional craftsmanship, created by Carlo Viglione on approximately two hectares of vineyard located on clay-loam soil. The vines, with an average age of over 45 years, yield grapes of great complexity and concentration, giving rise to a powerful, balanced, and profoundly territorial Barolo.

Vintage details

The 2019 vintage was characterized by a regular climate, with a rainy spring and a warm but not extreme summer. This balance favored a slow and homogeneous ripening of the grapes, which were able to best express the typical elegance of Cannubi. The harvest, done manually and selectively, allowed only perfectly ripe bunches, with skins rich in aromatic substances and fine tannins, to be brought to the cellar.

Winemaking and aging

Winemaking follows the principles of artisanal and natural production. Fermentation occurs spontaneously, meaning without the addition of selected yeasts, to respect the identity of the territory. Maceration, which lasts about 20-25 days, allows the must to extract color, aromas, and tannins from the skins. This is followed by a long aging of 36 months in 25-hectoliter oak barrels: a fundamental step to round out the structure, harmonize the aromas, and give the wine a refined complexity. The total sulfur dioxide remains very low (about 30 mg/l), a sign of clean and environmentally friendly processing.

Tasting notes

The Barolo Cannubi DOCG 2019 - Carlo Viglione is a wine that combines power and finesse, typicality and sensory depth.

Color

Visually, it presents a brilliant garnet red, elegant and typical of evolved Nebbiolo, with orange reflections that testify to its natural aging process.

Nose

The nose is broad and fascinating: scents of ripe cherry, withered violet, and wild rose are recognized, accompanied by spicy notes and nuances of tobacco, licorice, and undergrowth. The aromatic complexity evolves in the glass, inviting a slow tasting.

Taste

On the palate, it is structured, harmonious, and persistent. The tannins – those substances that give the sensation of astringency – are firm but well-integrated, a sign of careful aging. The long aromatic persistence leaves sensations of ripe red fruit, sweet spices, and a slight balsamic note on the finish. An elegant wine, capable of clearly and authentically expressing the territory.

Food pairings with Barolo Cannubi DOCG 2019 - Carlo Viglione

This Barolo is perfect with rich and structured dishes from Piedmontese and Italian cuisine. It pairs splendidly with:
  • Braised red meats or slow-cooked dishes, such as Barolo-braised beef.
  • Game dishes and beef stews.
  • Aged and flavorful cheeses, such as Castelmagno or Parmigiano Reggiano.
  • Important risottos, for example, white truffle risotto from Alba.
It is also an ideal wine for moments of meditation, perfect to savor slowly in company or as an after-dinner drink.

Storage and aging

How to store Barolo Cannubi DOCG 2019 - Carlo Viglione is essential to maintain its extraordinary quality. It is recommended to store it in a dark, cool place, with a constant temperature between 12 and 16 °C and controlled humidity. The bottle should be kept lying down, so that the cork remains moist and the wine does not oxidize. Thanks to its structure and long aging in wood, this Barolo has excellent aging potential: it can evolve for over 15 years, developing more complex tertiary aromas and an even more harmonious taste over time.
