2023 in South Tyrol was a balanced year: a mild winter anticipated bud break, while the cool spring and regular rainfall favored a slow and even ripening. The summer, warm but not extreme, allowed for the harvesting of healthy, aromatic grapes, while maintaining good acidity. The result is a vibrant, complex, and perfectly balanced Sauvignon Blanc.Winemaking and aging
After manual harvesting, the grapes are gently pressed to preserve the most delicate aromas. Fermentation takes place partly in stainless steel and partly in oak barrels, to balance freshness and structure. The wine then rests for approximately eight months on its lees (a technique that increases its aromatic complexity and softness). Malolactic fermentation is not carried out, a process that would convert malic acid into lactic acid, thus preserving the natural vibrancy and typical crispness of Sauvignon.Tasting notes
